Zucchini Lasagna Roll Ups Recipe

These delicious zucchini lasagna roll ups are lasagna without all the effort, a healthier vegetarian option for brunch, lunch or dinner.


8 lasagna noodles
2 cups marinara sauce
1/2 cup grated mozzarella cheese
chopped fresh basil optional for garnish

Zucchini Filling
1 tsp olive oil
3 cloves garlic minced
2 medium zucchini grated
1 cup+2 tbsp ricotta cheese part skim
1/2 cup grated parmesan cheese
1 large egg beaten
salt and pepper to taste

  1. Preheat oven to 350°F and set aside a 9x13 inch baking dish.
  2. Cook lasagna noodles according to package directions. Meanwhile, crush garlic cloves and finely grate zucchini, patting dry with paper towels to remove excess water.
  3. Place a nonstick skillet over medium heat. Add oil and garlic and saute for about 30 seconds. Add zucchini and saute for 4-5 minutes.
