Skinny Lemon Muffins Recipe

These Skinny Lemon Muffins are made with Greek yogurt, coconut oil and plenty of lemon zest for a fabulous bright, lemon flavor! So tender and moist, these muffins are a great way to start to your day!

Serves: 12 muffins


1⅔ cup flour (can use AP or half AP and half wheat)
⅔ cup granulated sugar
2 tsp baking powder
½ tsp salt
⅓ cup coconut oil
⅔ cup plain Greek yogurt or lemon flavored Greek yogurt
⅓ cup milk
1 egg, room temperature
1 - 2 tbsp lemon zest

Optional Glaze:
2 tbsp fresh lemon juice
1 cup powdered sugar
1 tbsp lemon zest


  1. Preheat oven to 350F.
  2. Line muffin pan with baking cups or spray with nonstick cooking spray.
  3. Combine flour, sugar, baking powder and salt in a small bowl. Set aside.
