Teriyaki Chicken Casserole Recipe

Have your favorite Chinese takeout prepared in a different way: baked in a casserole dish with assorted veggies and fried rice.



1 lb chicken breast
3/4 cup soy sauce low sodium
1/2 cup water
1/3 cup brown sugar packed
1 tbsp honey
3/4 tsp ginger ground
1 tsp extra virgin olive oil
1/2 tsp garlic minced
2 tbsp corn starch
2 tbsp water cold
3 cup fried rice such as this recipe - modifications are in below instructions
32 oz mixed vegetables (1 or 2 bags from frozen food ideally precooked)


  1. Preheat oven to 350 degrees F.
  2. In a small saucepan, bring soy sauce, water, brown sugar, honey, ginger, extra virgin olive oil, and garlic to a boil over medium heat. Let cook for 1 minute.
  3. While teriyaki sauce cooks, mix corn starch and water (creating "slurry") in a small bowl.
