Cheesy Fiesta Chicken and Rice Skillet Recipe


2 tablespoons olive oil
6 boneless, skinless chicken thighs or breasts
1 packet McCormick® Organics Taco Seasoning Mix, divided
1 cups long grain rice
1½ cups chicken broth
1 (15 ounce) can black beans, drained
1 (15 ounce) can diced tomatoes with juice (I used fire roasted)
1 (8.5 once) can corn
1 cup shredded cheddar cheese

fresh cilantro, chopped
sliced olives
1 avocado
